Ingredients
1/4 cup chopped green pepper
1/4 cup grated carrot
1/2 cup boiled black beans
1 tsp olive oil
1/2 tsp cajun spice
1/2 tsp oregano
1/4 tsp salt
(Optional) 2 tbsp grated mozzarella
(Optional) 1/4 tsp cumin powder
(Optional) Freshly grounded black pepper
Directions
- Heat the olive oil in a pan (if you want to have it warm)
- Add chopped green bell pepper
- Sauté pepper until tender on a medium heat
- Add the grated carrots
- Cook for 1 minute on medium heat
- Add boiled black beans
- Cook for 1 minute on medium heat
- Season with cajun spice, oregano, salt, black pepper and cumin powder
- Mix well and add grated mozzarella
