A healthy and nutritious meal full of flavours which can be enjoyed either warm or cold

Ingredients

  • 1/4 cup chopped green pepper

  • 1/4 cup grated carrot

  • 1/2 cup boiled black beans

  • 1 tsp olive oil

  • 1/2 tsp cajun spice

  • 1/2 tsp oregano

  • 1/4 tsp salt

  • (Optional) 2 tbsp grated mozzarella

  • (Optional) 1/4 tsp cumin powder

  • (Optional) Freshly grounded black pepper

Directions

  • Heat the olive oil in a pan (if you want to have it warm)
  • Add chopped green bell pepper
  • Sauté pepper until tender on a medium heat
  • Add the grated carrots
  • Cook for 1 minute on medium heat
  • Add boiled black beans
  • Cook for 1 minute on medium heat
  • Season with cajun spice, oregano, salt, black pepper and cumin powder
  • Mix well and add grated mozzarella
