Quick and easy meal for kids which can also be enjoyed as a snack for adults. Very convenient as a packed meal when out and about.

Ingredients

  • 2 soft brown thin bread slices

  • 2 tbsp store bought roasted red pepper pesto (or a pesto of your choice)

  • handful of fresh spinach

  • 1 cheese slice

  • 1/2 tsp oregano

  • 1/4 tsp of freshly crushed black pepper

  • butter (optional)

Directions

  • Place two slices of soft bread on a chopping board
  • Apply pesto evenly on the inner side of the bread and arrange the spinach on the slices
  • Season with oregano and freshly crushed pepper
  • Place the cheese slice and sandwich together
  • (Optional) Apply little bit of butter on the outer side of the sandwich
  • (Optional) Heat a pan and place the sandwich on the pan for 40 seconds (each side)
  • Serve warm with any sauce of your choice
