Ingredients
1/4 cup boiled conchigliette (any pasta of your choice)
1/4 cp boiled carrot and cauliflower puree
1 cheddar cheese slice (or any other cheese of your choice)
1/2 tbsp butter
1/2 tbsp plain flour
1/4 cup milk
1/2 tsp oregano
1/4 tsp salt
1/4 tsp freshly crushed black pepper
(Optional) 1/4 tsp parsley
Directions
- Boil the pasta as per instruction on the packaging
- Chop the carrots and cauliflower. Boil them in a sauce pan over a medium flame until they become soft
- Make a smooth puree of the carrot and cauliflower with a hand blender or food processor
- Heat a pan on a medium flame and melt the butter
- Add plain flour and saute for 1 minute
- Pour in the milk and cook until the sauce thickens
- Add the vegetable puree to the white sauce and cook for 5 minutes on medium flame
- Simmer the flame and add the cheese slice. Stir continuously until the sauce become silky smooth
- Fold in the boiled pasta and mix well
- Season with salt, black pepper, oregano and parsley
Notes
- If making for kids, conchigliette may be a good choice as they are bite size and easy for toddlers to chew
